Macadamis • Macadamias are native to Australia and have been eaten by the Indigenous peoples of Australia for centuries. However, it was not until the 1880s that the first macadamia orchard was planted in Australia and by then macadamias had already been taken to Hawaii, where they grow spectacularly well. The macadamia has the hardest shell of all commercially grown nuts and you know when a macadamia is ripe because it falls to the ground after the green husk that surrounds it has split. The nut is then gathered, dried and shelled. The rich buttery flavour of macadamias makes them a delicious snack when lightly roasted. Macadamias are also an ideal nut to toss through a salad and can be used in a crust for chicken or fish. The high oil content of macadamias means they can quickly turn rancid, so they should be stored in an airtight container in the fridge.
